Chocolate Drinks


 Chocolate Drink


*   Hot Or Chilled Cocoa   *


Ingredients:
  • 3 1/2 Tablespoons Cocoa
  • 1/4 Cup Sugar
  • 1/8 Teaspoon Salt
  • 1 1/4 Cups Boiling Water
  • 5 Cups Scalded Milk Or
        2 1/2 Cups Evaporated Milk
        2 1/2 Cups Boiling Water
  • 1/2 Teaspoon Vanilla Extract


Method:
  • Blend cocoa, sugar and salt in top of a double boiler,
    then mix to a paste with the 1 1/4 cups boiling water.

  • Place over direct heat,
    bring to a boil and cook rapidly for 1 minute,
    stirring constantly to form a syrup.

  • Add 3 cups scalded fresh milk or
            1 3/4 cups evaporated milk and
            1 3/4 cups of boiling water,
    and heat to scalding over boiling water.

  • Serve two adults from this mixture.

  • Then add remaining liquid, reheat,
    add rest of vanilla and serve three children.

  • Yield: About 7 Servings.


  • This method makes it possible to serve full strength
    cocoa to adults and half strength to children without
    making two lots of cocoa.

  • To make chilled cocoa,
    place pan of hot cocoa in cold water to cool quickly.
    Then pour into a sterile jar or bottle,
    cover tightly and place in coldest spot in refrigerator
    for at least 2 hours before serving.




*   Chocolate Syrup   *
For Hot Or Cold Chocolate


Ingredients:
  • 5 Squares Baking Chocolate (5 Oz.)
  • 2 Cups Boiling Water
  • 1 3/4 Cups Sugar
  • 1/4 Cup Light Corn Syrup
  • 1/2 Teaspoon Salt


Method:
  • Melt chocolate over hot water;
    add boiling water and cook over direct low heat,
    stirring constantly until smooth and thick,
    about 2 minutes.

  • Add sugar, corn syrup and salt,
    and then cook briskly for 3 to 4 minutes, stirring occasionally.

  • Cool.

  • Pour into clean glass jar.

  • There should be 2 3/4 cups, if less, add boiling water.

  • Cover jar, cool and store in refrigerator.


  • To use this syrup as flavoring for hot chocolate or
    cold chocolate milk,
    allow about 1 tablespoon to a cup of milk, or to suit taste.

  • If used as sauce on ice cream,
    stir in 1/4 cup butter while sauce is hot.





*   Hot Chocolate   *


Ingredients:
  • 2 Squares Baking Chocolate
  • 1 1/3 Cups Boiling Water
  • 1/3 Cup Sugar
  • Pinch Of Salt
  • 4 Cups Sculded Milk Or
        2 Cups Evaporated Milk
        And 2 Cups Boiling Water
  • 1/2 Teaspoon Vanilla Extract


Method:
  • Melt chocolate over hot water,
    add 1 1/3 cups boiling water,
    then cook 5 minutes to a smooth paste,
    stirring occasionally.

  • Add sugar and salt to hot milk,
    then combine with chocolate syrup and
    continue cooking 5 minutes over boiling water.

  • Add vanilla, whip for a minute with egg beater and
    serve steaming hot.

  • Addition of marshmellows or whipped cream makes a richer,
    more interesting drink.

  • Yield: 5 To 6 Servings.
