Recipes Galore EggNogs
* EggNog *
Ingredients: |
- 4 Eggs
- 1/4 Cup Sugar
- 1 Quart Milk, Chilled
- 1 1/2 Teaspoons Vanilla Extract
- 1/4 Teaspoon Salt
- Nutmeg

Method: |
- Beat 3 whole eggs and 1 yolk until very thick and
light in color.
- Add 3 1/2 tablespoons sugar, beating in thoroughly.
- Stir in milk, vanilla, and salt and
pour the mixture into glasses.
- Beat remaining egg white until almost stiff,
add remaining sugar and beat until stiff.
- Top each glass of EggNog with a spoonful of meringue,
sprinkle with nutmeg if desired, and serve immediately.
- Yeild: 5 Servings.

* Caramel EggNog *
Ingredients: |
- 6 Tablespoons Granulated Sugar
- 1 1/2 Cups Boiling Water
- 3 Eggs, Separated
- 2 Tablespoons Granulated Sugar
- 3 Cups Milk, Chilled
- 3/4 Cup Evaporated milk, Chilled
- 1/4 Teaspoon Salt, Or To Taste

Method: |
- Place the 6 tablespoons sugar in a skillet and heat,
stirring frequently, until an amber liquid is formed.
- Slowly add the boiling water and stir until caramel
dissolves;
remove from heat and chill.
- Just before serving
beat egg yolks until very thick and lemon yellow,
and beat egg whites separately,
gradually adding the 2 tablespoons sugar,
until very stiff and smooth.
- Combine chilled caramel syrup with the milk and
evaporated milk.
- Fold egg whites into yolks,
and quickly stir in the milk mixture and salt.
- Serve at once.
- Yield: 5 Servings.

* Molasses Nog *
Ingredients: |
- 2 Cups Evaporated Milk
- 2 Cups Ice Water
- Dash Salt
- 2 Or 3 Tablespoons Sorghum Or
Light Molasses
- Dash Of Nutmeg, Ginger Or Cinnamon
|
Method: |
- Combine milk, water, salt and molasses, stirring well.
- Pour into glasses and
sprinkle a dash of the preferred spice on top.
- Yield: 5 Servings.
