*     Drop Dumplings     *


Ingredients:
  • 1 1/2 Cups All-Purpose Flour
  • 2 1/4 Teaspoons Baking Powder
  • 1/2 Teaspoon Salt
  • 3/4 Cup Milk
  • Chopped Parsley ( Optional )


Method:
  • Sift flour, measure and resift 3 times with baking powder
    and salt, the third time into the mixing bowl.

  • Add milk all at once and stir rapidly until well blended.

  • If desired, add 1 teaspoon finely chopped parsley.

  • Drop by teaspoonfuls on top of stewed chicken,
    beef, or lamb stew,
    dipping the spoon into the hot broth each time
    before dipping into the batter, to prevent sticking.

  • As soon as dumplings are all in, cover the stew and
    boil moderately for 12 minutes without uncovering.

  • Then remove dumplings to a hot platter,
    arranging them around the outside and the stew in the center.

  • Even if the meat is well done, it should not be removed
    from the pot before the dumplings are added,
    and there should be at least 3 cups of boiling liquid
    so there will be enough gravy left after cooking the dumplings.

  • Yield: 5 Servings.




*     Butterscotch Pinwheels     *


Ingredients:
  • 2 Cups All-Purpose Flour
  • 1/2 Teaspoon Salt
  • 3 Teaspoons Baking Powder
  • 1/3 Cup Shortening
  • 3/4 Cup Milk
  • 1/4 Cup Melted Butter
  • 1/3 Cup Brown Sugar, Packed
  • 1/4 Cup Shite Corn Syrup
  • 1/2 Teaspoon Cinnamon
  • 1/4 Cup Chopped Nuts


Method:
  • Sift flour, measure, and resift 3 times with salt and
    baking powder.

  • Cut in shortening, add milk all at once,
    and stir quickly until dough stiffens.

  • Turn out onto floured board and knead 6 times.

  • Roll dough out carefully in a 12 x 8 inch rectangle,
    about 3/8 inch thick.

  • Brush with 1/3 the butter,
    sprinkle with 1/3 the sugar mixed with cinnamon,
    and roll up from the long side like jelly roll.

  • Cut in 16 slices.

  • Put 3/4 teaspoon each of butter, brown sugar, syrup and nuts
    in each of 16 small buttered muffin pans;
    place 1 slice in each, cut side down.

  • Bake in moderately hot oven ( 425 ° F )15 to 20 minutes or
    until browned.

  • Serve hot with butter.

  • Yield: 16 Small Pinwheels.
