 Sandwiches


*     Bacon Sandwiches     *


Ingredients:
  • 10 Slices Whole Wheat Bread
  • 1/3 Cup Soft Butter
  • 10 Slices Bacon ( 1/2 Pound )
  • Radish Slices Or Lettuce


Method:
  • Toast bread, spread immediately with soft
    butter.

  • Put 2 slices each of broiled, or pan-broiled
    bacon on 5 slices of toast.

  • Add radish slices or lettuce and top with
    remaining slices toast.

  • Cut as desired.

  • Serve hot.

  • Makes 5 Servings.




*   Bacon And Tomato Sandwiches   *


Ingredients:
  • 15 Slices Bacon
  • 3 Medium Size Tomatoes, Peeled
  • 1/4 Cup Mayonnaise
  • 10 Slices Bread Or Toast
  • 5 Leaves Lettuce


Method:
  • Pan-broil bacon until done.

  • Slice tomatoes rather thick.

  • Spread mayonnaise on the buttered bread or toast.

  • Place a leaf of lettuce on half of the slices.

  • On remaining slices arrange tomato and bacon slices.

  • Lay together and serve.

  • For convenience in eating, cut sandwiches in two
    diagonally.

  • Yield: 5 Sandwiches.




*   Grilled Cheese And Bacon Sandwiches   *


Ingredients:
  • 10 Slices Bread
  • 10 Thin Slices Cheese
  • 3 Tablespoons Prepared Mustard
  • 10 Slices Bacon ( 1/2 Pound )


Method:
  • Toast bread lightly.

  • Cover each slice with a slice of cheese, then spread
    cheese with mustard.

  • Cut each slice of bacon in half and lay 2 half slices
    on top of the cheese.

  • Grill in broiler under low heat until bacon is crisp
    and cheese is melted and slightly browned.

  • Serve hot with sweet or dill pickles.

  • Yield: 10 Open Face Sandwiches.




*     Club Sandwiches     *


Ingredients:
  • 15 Slices Toasted Bread, Buttered
  • 5 Leaves Lettuce
  • 5 Slices Roast Or
        Steamed Chicken
  • 10 Slices Bacon, Cooked
  • 2 Tomatoes
  • 1 Small Cucumber
  • 1/4 Cup Mayonnaise


Method:
  • On 5 slices of buttered toast, place lettuce leaves,
    and over this arrange chicken and bacon slices.

  • Cover with 5 more slices of buttered toast,
    buttered side down.

  • Spread top of these slices with mayonnaise, and
    on them arrange slices of tomato and cucumber.

  • Top with remaining slices buttered toast,
    buttered side down.

  • Stick toothpicks through opposite corners of each
    sandwich to prevent slipping, and cut each
    sandwich in 2, 3 or 4 pieces before serving,
    using a very sharp knife.

  • Makes 5 Sandwiches.




*   Swiss Ham And Tomato Sandwiches   *


Ingredients:
  • 10 Slices Buttered Toast
  • 10 Lettuce Leaves
  • 10 Slices Boiled Ham
  • 10 Slices Swiss Cheese
  • 3 Medium Size Tomatoes, Sliced
  • 10 Slices Bacon, Cooked
  • 3/4 Cup Thousand Island Dressing


Method:
  • On each slice of buttered toast, place a crisp lettuce leaf;
    then a slice of ham, a slice of cheese, and one
    or two tomato slices, depending on the size.

  • Top with a slice of bacon and serve with dressing
    poured over sandwich or in little paper cups at the side.

  • Makes 10 Open Faced Sandwiches.




*     Sardine Sandwiches     *


Ingredients:
  • 3 1/4 Oz. Can Sardines
  • 2 Hard Boiled Eggs, Chopped Fine
  • 1 Teaspoon Lemon Juice
  • 1/2 Teaspoon Prepared Mustard
  • Salt To Taste
  • 10 Slices Buttered Bread


Method:
  • Drain sardines thoroughly and remove tails, also
    bones if desired.

  • Mash sardines and combine with eggs, lemon
    juice, mustard and salt.

  • Spread between slices of buttered bread.

  • A leaf of lettuce in each sandwich gives crisp
    texture.

  • Makes 5 Sandwiches.
