Cookies - # 01


 Cookies & Milk


*     Brownies     *


Ingredients:
  • 3/4 Cup All Purpose Flour
  • 1/4 Teaspoon Salt
  • 1/2 Cup Butter Or
        Other Shortening
  • 1 Cup Sugar
  • 2 Eggs, Beaten
  • 1 Teaspoon Vanilla
  • 2 Squares Baking Chocolate,
    Melted And Cooled
  • 3/4 Cup Chopped Nuts


Method:
  • Sift flour, measure and resift with salt.

  • Cream butter, gradually blend in sugar and add beaten eggs;
    beat until smooth and fluffy.

  • Add vanilla and stir in melted chocolate.

  • Add flour mixture alternately in 2 or 3 portions,
    stirring well after each addition.

  • Add nuts with last few stirs.

  • Spread in a buttered 8 inch square cake pan,
    and bake in oven ( 350 ° F ) for about 20 minutes.

  • Remove pan to cake rack.

  • Cut in pieces while still warm.

  • Makes 16 to 20 Brownies 1 x 2 inches.




*   Chocolate Drop Cookies   *


Ingredients:
  • 2 Cups All Purpose Flour
  • 1/3 Teaspoon Salt
  • 1/2 Teaspoon Baking Soda
  • 1/2 Cup Shortening
  • 1/2 Cup Brown Sugar, Packed
  • 1/2 Cup White Sugar
  • 1 Egg, Beaten
  • 1 Teaspoon Vanilla
  • 2 Squares Baking Chocolate, Melted
  • 3/4 Cup Buttermilk
  • 1/2 Cup Chopped Nuts


Method:
  • Sift flour, measure and resift with salt and soda.

  • Cream shortening, add both sugars and cream until smooth.

  • Add egg and beat until flyffy.

  • Add vanilla.

  • Stir in cooled melted chocolate.

  • Add flour mixture and buttermilk alternately
    in 3 or 4 portions, beginning and ending with flour.

  • Stir in nuts.

  • Drop by heaping teaspoonfuls onto buttured cookie sheets,
    about 2 inches apart.

  • Bake at ( 400 ° F ) for 10 minutes.

  • Using broad spatula or pancake turner,
    transfer to cake racks and cool before storing or serving.

  • Makes About 36 Cookies.




*     Cocoa Oatmeal Cookies     *


Ingredients:
  • 1 1/4 Cups All Purpose Flour
  • 1/2 Teaspoon Baking Powder
  • 1/2 Teaspoon Salt
  • 1/3 Cup Cocoa
  • 1 1/4 Cups Sugar
  • 1 Egg, Well Beaten
  • 1/2 Cup Milk
  • 1 1/2 Teaspoons Vanilla
  • 1/3 Cup Shortening, Melted
  • 1/3 Cup Butter, Melted
  • 2 Cups Rolled Oats


Method:
  • Sift flour, measure, and resift with baking powder,
    salt, cocoa, and sugar.

  • Combine beaten egg, milk and vanilla,
    and add melted butter and shortening.

  • Mix thoroughly with the sifted dry ingredients.

  • Then stir in the rolled oats and drop by
    teaspoonfuls onto a buttered cookie sheet.

  • Bake at ( 350 ° F ) 15 to 20 minutes.

  • Remove to cake racks to cool.

  • Yield: About 5 Dozen Cookies.




*     Oatmeal Drop Cookies     *


Ingredients:
  • 1 1/2 Cups All Purpose Flour
  • 1/4 Teaspoon Salt
  • 1 Teaspoon Soda
  • 1 Teaspoon Cinnamon
  • 1/2 Cup Shortening
  • 1 Cup Sugar
  • 1 Egg
  • 1 1/2 Cups Rolled Oats
  • 2/3 Cup Buttermilk
  • 1/2 Cup Chopped Nuts
  • 1 Cup Seedless Raisins, Plumped


Method:
  • Sift flour, measure, and resift with salt,
    soda and cinnamon.

  • Cream shortening, blend in sugar,
    and add alightly beaten egg;
    beat until smooth and light.

  • Stir in half the flour; then add milk,
    rest of flour, oats, nuts, and raisins,
    stirring until well mixed.

  • Drop from a teaspoon onto a buttered baking sheet,
    and bake at ( 400 ° F ) for 10 minutes,
    or until nicely browned.

  • Yield: About 36 Cookies.
