Fruit Desserts - # 01


 Apple


*     Apple Crumble     *


Ingredients:
  • 2/3 Cup All Purpose Flour
  • 3/4 Cup Brown Sugar, Packed
  • 1/3 Cup Shortening ( Half Butter )
  • 4 Cups Pared, Cored And Sliced Tart Apples


Method:
  • Combine flour and brown sugar and cut in shortening
    to make a crumbly mixture.

  • Arrange pared, sliced apples in a shallow baking
    dish 10 x 6 1/2 x 2 inches,
    sprinkle sugar mixture over top,
    and bake in oven at ( 350 ° F ) about 30 minutes
    or until top is brown and crunchy and apples tender.

  • Yield: 5 to 6 Servings




*     Apple Dumplings     *


Ingredients:
  • 5 Large Or
        7 Medium Tart Cooking Apples
  • [ Plain Pastry ]
  • 1/3 To 1/2 Cup Sugar
  • 2 Tablespoons Butter


Method:
  • Peel, core and coarsely dice apples.

  • Roll pastry out in a rectangle about 12 x 18 inches
    and 1/8 inch thick, and cut into 6 inch squares.

  • Place one-sixth of apples in center of each square,
    sprinkle with sugar, dot with butter.

  • Moisten edges of pastry, gather up and pinch together,
    sealing the apple in.

  • Transfer to shallow baking pan and bake in oven
    at ( 450 ° F ) for 12 minutes or until slightly browned;
    then reduce heat to ( 325 ° F ) and continue baking
    25 minutes longer or until apples are tender.

  • Serve warm, with cream or Lemon Sauce.

  • Yield: 6 Servings.




*     Apple Snow     *


Ingredients:
  • 4 Medium Size Tart Cooking Apples
  • 3 Egg Whites
  • 3/4 Cup Sugar
  • 1 Tablespoon Lemon Juice
  • Jelly
  • [ Custard Sauce ]


Method:
  • Pare, core, and slice apples into saucepan;
    add 1/4 cup cold water, cover tightly,
    and cook slowly until mushy.

  • Mash and whip until smooth and flyffy;
    there should be 3/4 to 1 cup stiff sauce.

  • Chill.

  • Beat egg whites until just fluffy, and gradually beat in
    the sugar and lemon juice until very stiff and smooth.

  • Fold in the chilled apple sauce until thoroughly blended.

  • Serve chilled, with [ Custard Sauce ] and a spoonful of
    red jelly on top.

  • Yield: 5 Servings.




*     Baked Apples     *


Ingredients:
  • 5 Large Baking Apples
  • 1/2 Cup Brown Sugar
  • 1/4 Cup Raisins Or
        Chopped Nuts
  • 2 Tablespoons Butter


Method:
  • Wash and core apples.

  • Fill the cores with the brown sugar and raisins or
    nuts and dot with butter.

  • Place in baking pan or casserol and pour enough water
    around them just to cover the bottom of the pan.

  • Bake in oven at ( 350 ° F ) for 45 minutes to 1 hour,
    or until apples are tender when pierced with a fork.

  • Yield: 5 Servings.


Variation:
  • Fill centers of the apples with
        1/2 Cup Drained Crushed Pineapple and
        1/4 Cup Brown Sugar.

  • Dot with butter,
    pour water into pan, and bake as above.




*     Cinnamon Apples     *


Ingredients:
  • 5 Tart Cooking Apples
  • 2 Cups Sugar
  • 1 Cup Water
  • 1/4 Cup Cinnamon Red-Hot Candies


Method:
  • Wash, pare, and core apples.

  • Make syrup of sugar, water and red-hots.

  • Place apples in the syrup and cook gently 15 to 20 minutes,
    until just tender,
    turning the apples frequently so all sides become colored.

  • Cool and serve in the syrup as a dessert;
    or lift out, draining thoroughly,
    and serve on lettuce leaves with mayonaise as a salad.

  • Syrup may be saved and used again,
    adding more water and a few more red-hots as needed.

  • Yield: 5 Servings.
