Recipes Galore Fish - # 03
* French Fried Shrimp *
Ingredients: |
- 2 Lbs. Green Shrimp, Or
3 ( 5 Oz. ) Cans Wet-Pack Shrimp,
Drained And Cleaned
- 1/2 Cup Flour
- 1 Teaspoon Sugar
- 1/4 Teaspoon Salt
- 1 Egg
- 1/4 Cup Water

Method: |
- Clean but do not cook shrimp.
- Sift flour, measure and resift with sugar and salt into a mixing bowl.
- Beat egg, add water and add to flour mixture,
stirring until smooth.
- Dip shrimps into batter one at a time,
and drop into deep fat heated to ( 375 ° F );
fry to a delicate golden brown.
- Lift out onto absorbent paper to drain a few moments,
then serve while piping hot with Tartar Sauce or Soy Sauce.
- Yield: 5 or 6 Servings.

* Fried Scallops *
Ingredients: |
- 1 Quart Scallops
- Fine Dry Bread Crumbs
- 2 Eggs, Beaten
- Pepper, If Desired
- Deep Fat For Frying

Method: |
- If scallops are large,
split across the grain and cut into 3/4 inch cubes.
- Immerse scallops for 3 minutes in cold salted water
( 1 tablespoon salt to each cup of water )
- Roll in bread crumbs, then dip into beaten egg seasoned with pepper,
and again roll in crumbs.
- Place one layer deep in a wire frying basket,
and lower into deep fat heated to ( 375 ° F )
- Fry about 4 minutes or until richly browned and tender.
- Drain and serve piping hot, with Tartar Sauce if desired.
- Yield: 5 Servings.
