Fish - # 03


 Shrimp


*     French Fried Shrimp     *


Ingredients:
  • 2 Lbs. Green Shrimp, Or
        3 ( 5 Oz. ) Cans Wet-Pack Shrimp,
        Drained And Cleaned
  • 1/2 Cup Flour
  • 1 Teaspoon Sugar
  • 1/4 Teaspoon Salt
  • 1 Egg
  • 1/4 Cup Water


Method:
  • Clean but do not cook shrimp.

  • Sift flour, measure and resift with sugar and salt into a mixing bowl.

  • Beat egg, add water and add to flour mixture,
    stirring until smooth.

  • Dip shrimps into batter one at a time,
    and drop into deep fat heated to ( 375 ° F );
    fry to a delicate golden brown.

  • Lift out onto absorbent paper to drain a few moments,
    then serve while piping hot with Tartar Sauce or Soy Sauce.

  • Yield: 5 or 6 Servings.




*     Fried Scallops     *


Ingredients:
  • 1 Quart Scallops
  • Fine Dry Bread Crumbs
  • 2 Eggs, Beaten
  • Pepper, If Desired
  • Deep Fat For Frying


Method:
  • If scallops are large,
    split across the grain and cut into 3/4 inch cubes.

  • Immerse scallops for 3 minutes in cold salted water
    ( 1 tablespoon salt to each cup of water )

  • Roll in bread crumbs, then dip into beaten egg seasoned with pepper,
    and again roll in crumbs.

  • Place one layer deep in a wire frying basket,
    and lower into deep fat heated to ( 375 ° F )

  • Fry about 4 minutes or until richly browned and tender.

  • Drain and serve piping hot, with Tartar Sauce if desired.

  • Yield: 5 Servings.
