*   Beef Tomato Macaroni Medley   *


Ingredients:
  • 1 1/2 Lbs. Ground Beef Chuck
  • 2 Tablespoons Butter Or
        Bacon Fat
  • 1 Cup Water
  • 2 1/4 Cups Peeled Fresh Tomatoes, Or
        1 ( No. 2 ) Can Tomatoes
  • 8 Oz. Macaroni, Cooked
  • Salt To Taste


Method:
  • Cook the meat in the butter in a heavy skillet,
    stirring frequently until grey in color.

  • Or make patties of it and brown in the bacon fat.

  • Do not scorch.

  • Add water, cover and simmer gently about 20 minutes;
    then add tomatoes and drained cooked macaroni.

  • Season to suit taste, and continue cooking at simmering
    temperature a few minutes longer until liquid is reduced
    to consistency of gravy.

  • Yield: 5 Servings.




*   Beef And Spaghetti Dinner   *


Ingredients:
  • 7 Oz. Package Spaguetti
  • 2 Teaspoons Salt
  • 1 Lb. Ground Beef
  • 1 Tablespoon Butter
  • 1 Teaspoon Salt
  • Dash Of Black Pepper
  • 10 1/2 Oz. Can Condensed Cream Of Tomato Soup
  • 1 1/2 Cups Water


Method:
  • Cook spaguetti in 3 quarts rapidly boiling water with the
    3 teaspoons salt 20 minutes, or until perfectly tender.

  • Drain and rince in hot water.

  • Cook meat in a hot skillet with butter until grey in color.

  • Then add salt, pepper, and spaguetti.

  • Dilute the soup with the water and pour over the mixture;
    then cover and place skillet in moderate oven ( 350 ° F )
    to bake 30 minutes.

  • Serve piping hot.

  • Yield: 5 Servings.




*     Chili Con Carne     *


Ingredients:
  • 5 Slices Bacon
  • 1 Medium Onion, Sliced
  • 1 Lb. Ground Beef
  • 1 ( No. 2 ) Can Kidney Beans
  • 1 ( No. 2 1/2 ) Can Tomatoes
  • Salt To Taste
  • Chili Powder To Taste
        ( 1 To 2 Tablespoons )


Method:
  • Pan-broil bacon until done.

  • Remove bacon and saute onion in the drippings until tender,
    7 to 10 minutes.

  • Add meat and cook and stir until grey in color.

  • Chop bacon and return to mixture; add remaining ingredients.

  • Simmer until flavors are well blended, about 20 minutes,
    then serve hot.

  • If desired, the meat mixture may be served over hot cooked rice.

  • Yield: 5 Servings.




*   Ground Beef In Gravy   *


Ingredients:
  • 1 Lb. Ground Beef
        ( Round Or Chuck )
  • 3 Tablespoons Butter
  • 1 Tablespoon Grated Onion
  • 2 1/2 Cups Water
  • 1 Teaspoon Salt
  • Dash Black Pepper


Method:
  • Put meat into butter in a hot skillet with onion and cook with
    constant stirring to a light brown color.

  • Add water and seasonings and simmer, covered,
    for 30 minutes.

  • Thicken to desired consistency with a flour-water paste.

  • Serve hot on toast or on mashed or baked potatoes.

  • Yield: 5 Servings.




*     Hamburger Patties     *


Ingredients:
  • 1 1/2 Lbs. Ground Beef Chuck
  • 1 Egg, Beaten
  • 1 1/4 Teaspoons Salt
  • Dash Black Pepper
  • 3 Tablespoons Butter Or
        Bacon Drippings


Method:
  • Have meat freshly cut and put through food chopper just once.

  • Combine with egg, salt and pepper, mixing thoroughly but lightly.

  • Shape into 10 patties, round, oval or square each about
    1/2 inch thick.

  • Heat fat until sizzling hot in skillet,
    lay patties in it and brown quickly on both sides,
    turning carefully with pancake turner.

  • Reduce heat, cover and cook slowly about 8 to 10 minutes
    or until cooked through.

  • Transfer patties to hot platter and
    pour over them the juice remaining in the pan.

  • Garnish with Parsley.

  • Yield: 5 Servings.




*   Hamburger Rolls With Tomatoes   *


Ingredients:
  • 1 1/2 Lbs. Ground Beef Chuck
  • 1 Teaspoon Salt
  • Dash Pepper
  • 2 Tablespoons Water
  • 1 Egg, Beaten
  • 1 Tablespoon Milk
  • Fine Dry Bread Crumbs
  • 1 ( No. 2 ) Can Tomatoes
  • 1 Medium Onion, Sliced


Method:
  • Mix meat thoroughly with salt, pepper and water.

  • Form into barrel shaped Croquettes.

  • Dip into egg which has been beaten with the milk;
    then roll in crumbs.

  • Brown in shallow fat in a hot skillet,
    turning to brown all sides.

  • Rub the tomatoes through a sieve and pour over the Croquettes;
    add the onion.

  • Cover skillet and cook 20 to 25 minutes,
    turning the Croquettes occasionally.

  • Serve hot with the Tomato Sauce poured over them.

  • Yield: 5 Servings.
