Veal - # 02


 Cow


*     Veal Paprika     *


Ingredients:
  • 1 1/2 Lbs. Boneless Veal
  • 1 Clove Garlic, Sliced
  • 1/4 Cup Butter Or
        Margarine
  • 1/4 Cup Water
  • 1 Cup Thick Sour Cream
  • 1 Teaspoon Paprika
  • Salt To Taste


Method:
  • Wipe Veal with damp cloth and cut in 1 inch dice.

  • Saute Veal and Garlic in Butter until brown.

  • Add Water, cover tightly and simmer gently until Veal
    is perfectly tender, about 1 hour.

  • Add Sour Cream, Paprika and Salt and reheat to boiling.

  • Serve at once.

  • Makes 5 Servings.




*     Veal Stew     *


Ingredients:
  • 1 1/2 Lbs. Veal For Stew
  • 3 Cups Water
  • 2 Teaspoons Salt
  • Dash Pepper
  • 5 Carrots, Cut In 1 Inch Pieces
  • 5 Small Whole Onions
  • 3 Medium Potatoes,
        Pared And Cut In 8'ths
  • Flour


Method:
  • Wipe Veal with damp cloth, cut in dice and place in a
    3 quart saucepan.

  • Add water and salt.

  • Cover, simmer 45 minutes, then add pepper,
    carrots and onions; again cover and cook 15 minutes.

  • Add potatoes, and continue cooking until they are just tender,
    about 20 minutes longer.

  • Thicken liquid with flour mixed to a smooth paste with
    cold water, using 2 Tablespoons Flour to each cup of liquid
    and stirring until it boils.

  • Yield: 5 Servings.
