 Noodles


*   French Fried Crisp Noodles   *


Ingredients:
  • 2 Cups Fine Noodles ( 4 Oz. )
  • 2 Quarts Boiling Water
  • 2 Tablespoons Salt
  • Deep Fat For Frying


Method:
  • Drop Noodles into Rapidly Boiling Water
    to which Salt has been added.

  • Cook briskly for 5 minutes, then drain Noodles in
    colander and rince by running Hot Water through them.

  • Spread Noodles out loosely on Waxed Paper or
    Paper Toweling and cover lightly with Cheesecloth.

  • Let stand several hours or until Dried Off but Not Hard.
    " Or spread the Noodles on a Baking Sheet and dry off
    for about 30 minutes in a Slow Oven ( 300 ° to 325 ° F ) "

  • Fry Noodles a few at a time in a fine meshed frying
    basket, in Deep Fat heated to ( 360 ° F ),
    until they are a delicate golden brown.

  • Lift out and drain thoroughly on Paper Toweling.

  • Sprinkle with Salt.

  • Serve with Chop Suey, Veal A La King, Creamed Fish, Etc.

  • Yield: 5 Servings.




*   Baked Macaroni And Cheese   *


Ingredients:
  • 7 Or 8 Ounces Elbow Macaroni
  • 3 Teaspoons Salt
  • 3 Quarts Boiling Water
  • Salt
  • 3 Tablespoons Butter
  • 1/2 Pound Sharp Cheese, Grated
  • About 1 3/4 Cups Milk


Method:
  • Add Salt to rapidly Boiling Water in large saucepan;
    then drop Macaroni in and boil from 8 to 20 minutes,
    or until Macaroni is just tender,
    stirring occasionally to prevent sticking.

  • Drain in colander.

  • Run Hot Water through Macaroni to rince well.

  • Arrange half the Macaroni in a 6 Cup Buttered Casserole,
    sprinkle with Salt, and dot with half the Butter.

  • Cover with half the Grated Cheese.

  • Add another layer of drained Macaroni
    and Repeat with rest of ingredients.

  • Add Milk until it comes up to the top layer of Macaroni.

  • Set casserole in a shallow pan of water and bake in a
    moderately slow oven ( 325 ° F ) about 45 minutes,
    or until surface is a rich golden brown.

  • Yield: 5 Servings.




*   Rice And Cheese Croquettes   *


Ingredients:
  • 1 Cup Rice
  • 1 1/2 Cups Grated Sharp Cheese ( 3/8 Pound )
  • 1 Egg, Beaten
  • 1 1/2 Teaspoons Salt
  • Dash Pepper
  • 2 Beaten Eggs
  • Dried Bread Crumbs


Method:
  • Wash Rice as package directs.

  • Drop into 2 Quarts rapidly Boiling Salted Water,
    and cook rapidly until just tender ( about 20 minutes )

  • Drain and rince by running Hot Water through it.

  • Combine with Cheese, Egg, Salt, and Pepper.

  • Chill.

  • Shape into Balls, roll in Crumbs,
    then in Beaten Eggs and again in Crumbs.

  • Fry until golden brown in Deep Fat heated to 375 ° F.

  • Drain on absorbent paper and serve hot with any
    Tart Jelly or with Tomato Sauce.

  • Yield: 5 Servings




*     Cheese Fondue     *


Ingredients:
  • 2 Cups Milk, Scalded
  • 1/2 Pound Sharp Cheese,
           Grated Or Diced Small
  • 1 Tablespoon Butter
  • 1 Teaspoon Salt
  • Dash Pepper
  • 3 Eggs, Separated
  • 4 Slices Toasted White Bread,
        Cut In Dice


Method:
  • Scald Milk, add Cheese, Butter and Seasonings,
    and mix well.

  • Beat Egg Yolks until thick and lemon colored,
    and slowly stir in Hot Milk mixture.

  • Beat Egg Whites until stiff and fold into hot mixture
    lightly but thoroughly.

  • Pour into glass baking dish ( 6 x 10 x 2 inches ), or
    ( 8 inches square ), and sprinkle Toast Dice on top.

  • Bake in a shallow pan of hot water in moderate oven
    at ( 350 ° F ) for about 45 minutes, or until a sharp
    knife inserted in the center comes out clean.

  • Yield: 5 Servings
