* Rendering Chicken Fat *
Put Chicken or Other Poultry Fat into a Shallow Baking Pan
and place in a Slow Oven ( 250 ° to 300 ° F ) until
Fat Fries Out.
Drain Off the Accumulated Fat from time to time To Avoid
Overheating and Strain.
Store in a Closed Covered Container in Refrigerator.
Chicken Fat is a Delicious Substitute for Butter, in Cakes
or Cookies, or for Frying Potatoes, or wherever Small
Amounts of Fat are used for Cooking.
The Cracklings Left add Delicious Flavor to Biscuits and
Cornbread.
