*     Rendering Chicken Fat     *


  • Put Chicken or Other Poultry Fat into a Shallow Baking Pan
    and place in a Slow Oven ( 250 ° to 300 ° F ) until
    Fat Fries Out.

  • Drain Off the Accumulated Fat from time to time To Avoid
    Overheating and Strain.

  • Store in a Closed Covered Container in Refrigerator.

  • Chicken Fat is a Delicious Substitute for Butter, in Cakes
    or Cookies, or for Frying Potatoes, or wherever Small
    Amounts of Fat are used for Cooking.

  • The Cracklings Left add Delicious Flavor to Biscuits and
    Cornbread.
