Fruit Pies - # 02


 Fruit Pie


*     Fresh Strawberry Pie     *


Ingredients:
  • 1 Quart Strawberries
  • 1 Cup Sugar
  • Water
  • 1/3 Cup Corn Starch
  • 1 Tablespoon Lemon Juice
  • Baked 8 Inch Pie Shell ( Plain Pastry )


Method:
  • Prepare [ Plain Pastry ] to Make a Pie Shell.

  • Wash and Hull Strawberries, Picking Over Carefully to
    Remove any Imperfect Ones.

  • Add Sugar and Let Stand Overnight or at Least 2 Hours,
    Covered.

  • Drain Off Juice and Add Enough Water to Make up to
    1 3/4 Cups Liquid.

  • Blend in Cornstarch to a Paste with about 1/4 Cup of
    The Liquid in top of Double Boiler, Add Rest of Liquid
    and Cook Over Direct Heat with Constant Stirring until
    Sauce Boils and is Clear.

  • Place over Boiling Water, Cover and Cook 15 minutes
    Longer.

  • Remove from Heat, Add Lemon Juice, and Fold In
    Strawberries.

  • Cool to Lukewarm Before Pouring into Baked Pie Shell.

  • Top May be Decorated with Cut Out Pieces of Pastry
    Baked Separately From the Shells, or Garnished with
    Whipped Cream.

  • Yield: 5 Servings




*     Strawberry Whip Pie     *


Ingredients:
  • 1 Pint Strawberries
  • 1 Cup Chilled Whipping Cream
  • 1 1/2 Tablespoons Lemon Juice
  • 1/2 Cup Sugar
  • Pinch Salt
  • Baked 8 Inch Pie Shell ( Plain Pastry )


Method:
  • Prepare [ Plain Pastry ] to Make a Pie Shell.

  • Wash and Hull the Strawberries then Slice Or Cut
    in Quarters.

  • Save several Perfect Berries for Garnish if desired.

  • Just before serving, Whip The Cream in a Chilled
    Bowl with a Chilled Beater Until Stiff;
    Add Lemon Juice, then Beat In the Sugar.

  • Fold in Strawberries and Turn Into the Pie Shell.

  • Top With the Selected Whole Berries.

  • Serve at once.

  • Yield: 5 Servings.
