 Biscuits


*     Cheese Biscuits     *


Ingredients:
  • 1 1/2 Cups All-Purpose Flour
  • 2 1/4 Teaspoons Baking Powder
  • 1/2 Teaspoon Salt
  • 1/4 Cup Shortening
  • 1/2 Cup Milk
  • 1/4 Cup Grated Sharp Cheese Blended
    With 2 Tablespoons Butter


Method:
  • Sift flour, measure, and resift 2 times with baking powder
    and salt.

  • Cut in shortening with pastry blender or 2 knives,
    until particles are the size of navy beans.

  • Add milk all at once and stir quickly until dough stiffens.

  • Turn out on floured board and knead for about 20 seconds.

  • Roll out 1/4 inch thick and cut in 1 1/2 inch rounds.

  • Spread 2/3 of cheese mixture between pairs of biscuits,
    sandwich fashion, and the rest on top,
    and transfer to baking sheet.

  • Bake in a hot oven ( 450 ° F ) 12 minutes or
    until biscuits are golden brown.

  • Serve piping hot.

  • If preferred,
    the cheese mixture may be cut into the sifted dry ingredients
    and distributed through the dough in mixing.

  • Yield: 15 To 18 Biscuits.




*     Baking Powder Biscuits     *


Ingredients:
  • 2 Cups All Purpose Flour
  • 3 Teaspoons Baking Powder
  • 1/2 Teaspoon Salt
  • 1/3 Cup Shortening Or
           Cooking Oil
  • 3/4 To 7/8 Cup Milk Or Cream


Method:
  • Sift flour, measure, and resift with baking powder and salt,
    into a 3 quart mixing bowl.

  • Add shortening and cut in with pastry blender or
    2 knives until particles are size of rice grains.

  • Add milk all at once and stir vigorously until
    dough just stiffens up.

  • The larger amount of milk will probably be required in cold
    weather; dough should be rather soft.

  • Turn out onto floured board or pastry cloth,
    knead from 12 to 15 times;
    then roll or pat 3/8 to 3/4 inch thick.
    ( According to whether you want thin crusty biscuits or
    fat soft ones. )

  • Cut out with biscuit cutter dipped in flour,
    lift onto a greased baking pan.

  • Brush tops with melted butter.

  • Bake in oven at ( 450 ° F ) 10 to 15 minutes,
    depending on thickness,
    or until they are golden brown.

  • Serve immediately.

  • Yield: 12 To 15 Medium Sized Biscuits.


  • Note: To save trouble in cleaning up after biscuits,
    try turning dough out onto a piece of waxed paper
    sprinkled with flour.

  • Knead and pat the dough out on this paper,
    and after the biscuits are cut out,
    the paper may be thrown away.

Method:
  • But add 1 tablespoon more shortening and,
    if desired 1 or 2 tablespoons sugar,
    to be sifted with the flour mixture.

  • For an extra tender shortcake,
    make sure to use milk not cream.
