 Burning Sausages


*     Boiled Frankfurters     *


Method:
  • Drop 8 to 10 Frankfurters into 1 Quart actively Boiling Water,
    turn off heat, cover and let stand on back of stove 5 minutes.

  • Drain and Serve Immediately.

  • Yield: 5 Servings.




*     Pan Fried Frankfurters     *


Method:
  • Heat 2 Tablespoons Fat in a Heavy Skillet and put
    8 to 10 Frankfurters in whole, or split in half lengthwise;
    brown moderately fast on all sides, cooking until heated
    through.

  • Serve Immediately.

  • Yield: 5 Servings.


Variation:
  • To Add Interesting Appearance and Different Flavor,
    make a Shallow Spiral Cut - Corkscrew Fashion - the full
    length of Frankfurter before Pan Frying.

  • The Cut Opens Attractively in Frying.




*     Frankfurters On Buns     *


Method:
  • Heat 8 to 10 Frankfurters either
    simmering as in [ Boiled Frankfurters ] or by
    pan frying as in [ Pan Fried Frankfurters ]

  • Split Long Buns, Toast and Spread With Butter,
    then place Frankfurters inside.

  • If desired, Buttered Side of Buns may be Spread Lightly
    with Prepared Mustard, Sweet Pickle Relish or Ketchup.

  • Makes 5 Servings.




*     Barbecued Frankfurters     *


Ingredients:
  • 1 Medium Onion
  • 2 Tablespoons Butter
  • 2 Tablespoons Vinegar
  • 2 Tablespoons Brown Sugar
  • 4 Tablespoons Lemon Juice
  • 1 Cup Ketchup
  • 1 Tablespoon Worcestershire
  • 1/2 Tablespoon Prepared Mustard
  • 1/2 Cup Chopped Celery
  • Salt To Taste
  • 1/2 Cup Water
  • 1 1/2 Lbs. Frankfurters, ( 12 To 15 )


Method:
  • Brown Onion in Butter, add Rest of Ingredients,
    except for Frankfurters, and cook slowly for 20 minutes.

  • Prick Skins of Frankfurters.

  • Place in the Sauce, Cover and Cook slowly until heated
    through and Flavored by the Sauce.

  • Yield: 5 or 6 Servings.




*   Sauerkraut With Frankfurters   *


Ingredients:
  • 1 ( No. 2 1/2 ) Can Sauerkraut
  • 1 Tart Apple, Sliced
  • 2 Tablespoons Sugar
  • 2 Tablespoons Bacon Or
        Sausage Drippings
  • 1/2 Cup Water
  • 10 Frankfurters Or
        16 Cooked Pork Sausages


Method:
  • Turn Sauerkraut into large Saucepan, add Sliced Apple,
    Sugar, Fat and Water.

  • Cover and Simmer until Apple is barely tender.

  • Lay Frankfurters or Sausages on top of Kraut;
    cover, and cook gently about 10 minutes longer or until
    Frankfurters are heated through.

  • Yield: 5 Servings.
